Conversion to gaff rig - 24' E

I'm considering converting my current bermudan rigged 24' Eventide to gaff cutter. I have the original Ratsey and Lapthorn sails from the mid 60's. Has anyone any thoughts on this? How do I start to plan this? She is tabernacle stepped wooden mast with wire standing rigging that is all due replacement anyway. Any thoughts or advice would be gratefully received.
